This coming weekend I will begin baking Christmas sweets for my guys.
I wanted to share some recipes with you.
Buckeyes
Ingredients
2 lbs creamy peanut butter
1 lb butter
3 1/2 cups 10x powdered sugar
2 tsp vanilla
12 oz bag of milk chocolate chips
1/2 bar paraffin (shredded)
wax paper
toothpicks
Mix peanut butter, butter, sugar, and vanilla until creamy and smooth. Form balls about the size of a quarter. Lay on tray putting a toothpick in each one and put trays in freezer for about 2 hours.
Mix chocolate chips and paraffin in microwave-safe bowl. Microwave at 50%
(medium) for 30 seconds. Stir. Repeat until mixture is smooth. Remove balls from freezer and dip them 3/4 into chocolate mixture and sit on wax paper. Once they have cooled, take out toothpicks, and smooth over the hole. Store in a cool place.
Snickerdoodles
Ingredients
1/2 cup margarine
1/2 cup shortening
1 1/2 cups sugar
2 eggs
2 3/4 cups flour
1/4 tsp salt
1 tsp baking soda
2 tbsp sugar
2 tsp cinnamon
2 tsp cream of tartar
Heat oven to 400 degrees. Mix butter, shortening, eggs, and 1 1/2 cups sugar. Blend in flour, cream of tartar, baking soda, and salt. Shape dough into balls. Mix 2 tsp sugar and cinnamon. Roll balls in mixture. Place 2 inches apart on an ungreased cookie sheet. Bake 8-10 minutes or until set. Remove from baking sheet.
